Description:
Lactobacillus bulgaricus is the main bacterium used in the production of yogurt. It is also found in other natural fermentation products. First discovered by Bulgarian doctor Stamen Grigorov in 1905, the bacteria feeds on lactose and produces lactic acid, which is used to preserve milk.
In our body, the lactic acid produced by L. bulgaricus helps keep the pH in the small intestine too low for harmful bacteria growth to occur. In food systems, the lactic acid produced by Lactobacillus bacteria ferments foods such as sauerkraut, cheese, wine, beer, pickles and also yogurt. The increased bacterial count of yogurts made with starter cultures of Lactobacillus bacteria not only taste better, but may have increased therapeutic value over other yogurts, according to an article in a 2008 issue of " World Journal of Diary and Food Sciences."
